It's that time of year where gardens start abundantly overflowing with massive zucchinis.

Whether you grew one or you were given one by someone who grew too many, we've got the recipes for you that I know you'll love.

These vegan zucchini recipe ideas are so good, you'll want to make them again and again. They are even great for vegan meal prep and even if you don't grow your own or get one given to you, these zucchini recipes are great vegan budget friendly ideas too!

Handing out zucchinis

Every year without a doubt we end up with an abundance of zucchini. And it's not like we're buying a ton of it, just as a 10 minute, every other day kind of farmer, zucchini happens to fall into the fairly easy to grow category. So we grow it and we end up with a lot but at some point people stop taking your "I got some zucchini for you" phone calls. I'm about to just start leaving them in mailboxes. You hear that mom.

So it's like what am I to do with all of this zucchini? So this here bread uses up a lot of it. It's a quick bread, and some may call it a frosting-less loaf cake but it's so good. And this uses up an entire you know average-sized zucchini.

Do you have to squeeze the water out of zucchini

As we all know zucchinis can you know kind of take over. One of the downsides of using a zucchini I mean even for myself is that you have to squeeze it prior to using it in your recipe.

That alone when I read through a recipe once I see it I'm like yeah never mind I'm not in the mood to exercise before making my recipe so this recipe I created in a way that the excess moisture from the zucchini it plays a role in the orchestra this way to create that you know so-called masterpiece which you know outside of eating it it's probably my favorite part.

When making a quick bread recipe I recommend using a spatula when mixing but also to make sure you measure that flour accordingly. Using a spatula manually is going to play a part in helping you not create a dense bread by simply over mixing.

But another common reason for dense bread is just mismeasuring that flour even if you do it a tiny bit it just won't compensate enough to give you what you're looking for.

I've made this particular bread successfully with gluten-free flour. It was a one-to-one blend from I believe king arthur.

But I've also developed two other zucchini breads one that is gluten-free with a flour blend that you create and I've also created another that's not a chocolate version if that's not your thing and that you could find in the description along with the gluten-free one.

Making muffins instead of bread

Another thing I love is you can use this quick bread to make muffins if that's something else you prefer, And I love this recipe because either way you go the quick bread or the muffins they're both freezable which is great if you wanna you know use up a ton of zucchini.

But also if you want to make you know a bunch of muffins and not share you're simply just going to need a you know a lot of freezer space and no kids.

Are zucchinis a fruit or vegetable?

My whole life is a lie. You know at one moment I'm being taught zucchini's a vegetable. Next my kids are yelling at me telling me that zucchini suddenly are fruit. And I feel deceived the next day I'm just staring down the guy at the grocery store who's working there humbly replenishing these fruit zucchinis. Like how dare you. Ge paid me no mind.

He probably gets the stare like once a week as people are discovering zucchinis are fruit.

These zucchini fritters are addicting and they are small so they kind of give you that mindset like chips do. Oh I could just eat two or seven. I mean it's fine.

I've made this recipe a few times with several different vegan cheese brands so I don't necessarily have like a recommendation on what you need to use but i would go with you know whichever vegan cheese brand your taste buds desire because the cheese is a huge part of what is dominant in the flavor.

Tips for perfect zucchini fritters 

Zucchini fritters if not done right can be a challenge. As it does depend on really getting the water out of the zucchini in order to get a good bind with your ingredients. Unfortunately this isn't one you can just not squeeze things out and be successful but the squeezed water you can use in like a smoothie or you know part of the cooking process and it's fairly rewarding.

How to best squeeze water out of zucchini

As you saw I used the bag to do the squeezing and it's a nut bag that I use for making homemade plant milks. I'll link one I'm using in the description as I find it so much easier than using like a you know kitchen towel.

You also want to get a really good you know gelatinous flax egg so try using hot water to possibly bring that flax egg together and if not I would say you could use a chia egg as folks are really successful with that here.

If necessary you could use gluten-free bread crumbs and you don't have to worry about you know different measurements for any of the other ingredients. I like to enjoy these with uh you know homemade vegan ranch, in the description, or honestly just plain.

The kids love these with ketchup but who am I fooling they love everything with ketchup.

Why I love zucchini boats

For a certain amount of months this particular meal is within the uh you know bi-weekly rotation. It's easy and you know not way too many ingredients.

But it's also a really good meal that is like undercover delicious. Like you eat it and you're caught off guard by how surprisingly delicious it is. Not to mention it uses up so many zucchinis. And no squeezing. Overall most of the recipes I design are made for at least a family of four.

This particular recipe I only made half in the video. But it actually calls for four zucchinis making about eight boats basically double what you saw on that tray. Such a great recipe if you have a big family or maybe you have some folks coming over or you know maybe you're looking to meal prep for the week.

On the other hand it's also extremely adaptable if you're looking for maybe just you or you and a significant other you could simply cut the meal down to half like i did in the video or even a quarter and you have the serving size that you're looking for for yourself.

I'm using lentils here to represent like a ground meat texture I've also used you know vegan meat crumbles, chickpeas, tofu, and they all do really well here.

Although you know out of those choices chickpeas are the least neutral in flavor so while good I don't prefer them as much as the other options in this particular dish.

I've already said this but again it's another recipe that I love because you can just really dodge the whole forearm exercise of squeezing out that zucchini water as the water is playing a crucial role in making a very saucy ensemble.

And although it doesn't change the flavor I uh i've also made this with yellow squash which to me I'm just not sure why I don't just call that yellow zucchini but then I'm also confused like why don't we just call it cauliflower white broccoli.
